Food Safety Supervisor (FSS) — NSW
In NSW it is mandatory for every food business that handles unpackaged ready-to-eat potentially hazardous food (cafes, restaurants, takeaways, caterers, child care, aged care) to have at least one trained and certified Food Safety Supervisor (FSS) who is reasonably available to advise / supervise food handlers. FSS must be refreshed every 5 years.
